Easy Crawfish Etoufee

 

Servings: 6-8

 

Ingredients:

            1 stick of unsalted butter

            1 large onion (medium dice)

            1 large green bell pepper (medium dice)

            1 can (10 oz) Casa Fiesta Tomatoes and Chilies

            1 can (10 oz) cream of mushroom soup

            1 can (14 oz) chicken broth

            1 package (12 oz) crawfish tails

            TT Cajun Injector Cajun Shake

            TT Louisiana Hot Sauce

            Garnish-  Freshly chopped parsley, optional

 

Cooking Instructions:

-         On medium heat, melt butter, when butter starts to bubble, add onions and bell peppers. Cook for 10 minutes.

-         Add Casa Fiesta tomatoes and chilies, cream of mushroom, chicken broth, Cajun shake, and hot sauce.  Stir well and bring to boil.  Once the etoufee reaches a boil, lower the heat and bring to a slow simmer. Cook for about 10 minutes.

-         Add crawfish tails and cook for additional 5 minutes.  Turn off heat and cover until ready to serve.

-         Serve with rice and garnish with freshly chopped parsley.

 

 

* Variations: This recipe is also great if you substitute the crawfish with chicken, shrimp, or portabella mushrooms.   It is also great over pasta!!
