Sweet and Spicy Smoked Venison Jerky

 

 

Servings: 6-8

 

Ingredients:

1-     1 ½ lb. deer roast

¾ cup Worcestershire sauce

¾ vegetable oil

½ tbsp minced garlic

½ tbsp ground cinnamon

1 tbsp sugar

1 tbsp Louisiana Habanero Pepper sauce

½ tbsp Cajun Injector Cajun Shake

 

 

Equipment:

·        Electric Smoker

·        Hickory Wood Chunks or chips

 

Cooking Instructions:

-         Slice deer roast in thin strips.  For tougher jerky, slice with the grain.  For a more tender jerky, slice across the grain.  Put the roast in freezer for about 15 minutes prior to slicing, may make slicing easier.

-         Combine remaining ingredients in a plastic bag or container with lid.  Add sliced deer roast and marinate overnight or up to 24 hours.

-         Set up smoker according to manufacturers instructions.

-         Smoke jerky for 6-8 hours until jerky is dry enough to your liking.

-         Store in air tight containers.
