2 - 29 oz. Bruce's Cut Yams, drained 1 Tbsp. olive oil 8 oz. ham, diced 1 medium onion, diced 3 cloves garlic, chopped 3 shallots, chopped 2 red bell peppers, julienned Salt and pepper to taste 1/2 cup parmesan cheese 1 cup grated gouda cheese Preheat oven to 375°. Sauté ham in olive oil until crisp and brown. Add garlic, onion, shallots, and peppers. Cook about 2 minutes. Season with salt and pepper and allow to cool. Grease 2-quart baking dish and line bottom with yams. Top first layer with 1/3 onion mixture, then 1/3 of each of the cheeses. Repeat for 2 more layers. Cover with foil and bake 30 minutes. Remove foil and cook 15 minutes more.
