Bruce's® Sweet Potato Muffins

1 1/2 cups self-rising flour
1 tsp. nutmeg
1 tsp. cinnamon
1 cup brown sugar
2 eggs, lightly beaten
1/2 cup vegetable oil
2 tablespoons evaporated milk
1 cup Bruce's Mashed Yams® or
   Bruces's Cut Yams® mashed
1/4 cup chopped pecans

Mix flour, spices and nuts in mixing bowl. Stir in sugar, eggs, oil and milk. Blend well. Stir in cup of Bruce's Mashed Yams®. Pour batter into greased muffin tin. Bake for 15 minutes or until toothpick inserted in center of muffins is clean. Cool in pan before turning onto a wire rack.
