Grilled Duck Breast

Ingredients:
6 4-ounce skinless, boneless, duck breasts
3 ounces Cajun Injector® Duck Recipe™ marinade
6 strips bacon
Wooden toothpicks
Cajun Injector® Quick Shake™ Cajun Shake® Seasoning

Preparation:

Prepare grill for medium direct heat.  Inject each duck breast with 1/2 ounce marinade.  Roll up breasts and wrap one strip of bacon around each breast; secure with toothpicks.  Sprinkle with Cajun Shake.  Grill duck rolls for 20 to 25 minutes or until desired doneness, turning occasionally. (An internal temperature of 110º F is rare; 150º F is well done.  Do not overcook.)  Makes 6 servings.
